  • 1 bunch basil leaves
  • 1 bunch parsley leaves
  • ½ bunch oregano leaves
  • 2 Tbsp pickled jalapeno chillies
  • 2 green shallots
  • ½ cup extra virgin olive oil
  • finely-grated zest and juice of 2 limes
  • 4 cloves garlic, chopped
  • 1 tsp caster sugar
  • 1 tsp ground cumin
  • 1 tsp ground coriander seeds
  • 1 tsp ground fennel seeds
  • sea salt flakes and freshly-ground black pepper
method
  • Combine the herbs, chillies, shallots, oil, zest, juice, garlic, sugar and spices in a blender and puree until smooth. Season with salt and pepper.
