Essentially the same as a #ribeye steak on the bone except a tomahawk has a thick cut piece of rib eye and a long frenched bone. This baby won’t fit in a pan so it’s grill all the way!

THIS RECIPE MAKES US THINK OF CHRISTMAS 🎄🎄… it must be the roast and the chermoula sauce! If you’re thinking of something different for #christmasmenu this year, we suggest our #naturesfreshnaturalbeef RUMP ROAST. Full recipe details follow.

Ingredients:

1.2kg piece Nature’s Fresh bolar blade

sea salt flakes and freshly-ground black pepper

2 tsp harissa paste

½ cup extra virgin olive oil

2 tsp cumin seeds

1 tsp coriander seeds

1 bunch coriander leaves

1 bunch parsley leaves

½ bunch thyme leaves

4cm piece ginger, minced

4 cloves garlic, minced

finely-grated zest and juice of 2 lemons

1 tsp chilli flakes

1 cup chickpea four

2 Tbsp buckwheat flour

2 sprigs rosemary leaves, finely chopped

Method:

1/ Truss the bolar blade with kitchen string, then rub with salt, pepper, harissa and 1 Tbsp olive oil. Set on a rack over a roasting pan and place in a moderate lidded barbecue and roast for 45 minutes, until medium. Allow to rest for 7 minutes.

2/ Place the cumin seeds in a pan over high heat and fry until toasted. Grind in a mortar and put half in a bowl, setting the rest aside. Toast and grind the coriander seeds and add to the bowl. Finely chop the herbs and add to the bowl with the ginger, garlic, zest, juice, chilli and ¼ cup extra virgin olive oil. Season with salt and pepper.

3/ Combine the flours, rosemary, reserved cumin and 1 cup ice cold water in a bowl and whisk well. Season with salt and pepper. Set a crepe pan over a moderate heat and add ¼ cup at a time, swirling to coat. Cook for 1 minute each side. Repeat with the remaining batter.

4/ Carve the beef and serve with the chermoula sauce and chickpea crepes.

All-day Nature’s Fresh silverside with herb gravy, carrots & soybeans

Ingredients:

1.8kg piece Nature’s Fresh silverside
sea salt flakes and freshly-ground black pepper
¼ cup extra virgin olive oil
2 brown onions, finely diced
4 sticks celery, very finely chopped
6 cloves garlic, minced
1 bunch thyme chopped
4 bay leaves
12 carrots, peeled and chopped
1L dry white wine
2L beef stock
1 Tbsp cornflour
2 cups soybeans, blanched
1 red onion, finely sliced
1 bunch chives, snipped
1 bunch sage, finely sliced

Method:

1) Season the beef generously with salt and pepper, then sear on a griddle with half the oil. Sauté the onions, celery, garlic, thyme and bay leaves in the remaining oil until completely softened. Transfer to a slow cooker with the beef, carrots, wine and stock. Cook on low heat for 12 hours. Mix in the soybeans and onion.

2) Pour the cooking liquid into a medium saucepan and boil rapidly to reduce by half. Mix the cornflour with 2 Tbsp water, then whisk in and simmer until thickened. Fold in the herbs, then pour back over the meat.

1 bunch basil leaves
1 bunch parsley leaves
½ bunch oregano leaves
2 Tbsp pickled jalapeno chillies
2 green shallots
½ cup extra virgin olive oil
finely-grated zest and juice of 2 limes
4 cloves garlic, chopped
1 tsp caster sugar
1 tsp ground cumin
1 tsp ground coriander seeds
1 tsp ground fennel seeds
sea salt flakes and freshly-ground black pepper

method:

1) Combine the herbs, chillies, shallots, oil, zest, juice, garlic, sugar and spices in a blender and puree until smooth. Season with salt and pepper.

An easy meal that can feed up to 6 😄

Szechuan-spiced Nature's Fresh topside stirfry

INGREDIENTS:

750g Nature’s Fresh beef topside, cut into fine strips
2 tsp Chinese five spice
2 tsp ground Szechuan pepper
2 Tbsp light soy sauce
2 tsp sesame oil
1 Tbsp cornflour
2 red onions, cut into wedges
1 red capsicum, diced
8cm piece ginger, cut into matchsticks
6 cloves garlic, chopped
2 Tbsp peanut oil
2 bunches broccolini, chopped
1 bunch garlic chives, chopped
1 cup Chinese cooking wine
2 Tbsp sweet soy sauce
juice of 2 limes
rice, to serve

METHOD:

1️⃣ Mix the topside, spices, soy, sesame oil and cornflour in a bowl. Toss the onions, capsicum, ginger and garlic in a second bowl. Fry the vegetable in a wok over a high heat in batches in a little peanut oil, until just softened. Add the broccoli and fry until tender.

2️⃣ Pour the remaining oil into the wok and fry the beef in batches. Add to the vegetables. Pour the cooking wine, sweet soy and lime juice into the wok, boil briefly, then return all ingredients. Toss well, then serve with rice.

Grilled tomahawk with charred tomato compote and caper-truffle butter

INGREDIENTS

1.6kg Tomahawk steak
1 tsp coriander seeds, toasted
1 tsp celery seeds
½ tsp caraway seeds, toasted
sea salt flakes and freshly-ground black pepper
¼ cup avocado oil
2 punnets small truss tomatoes
1 red onion, sliced
4 cloves garlic
2 sprigs rosemary leaves
¼ bunch basil leaves, torn
2 Tbsp pine nuts, toasted
125g unsalted butter, at room temperature
2 tsp capers, finely chopped
2 tsp truffle oil
Finely grated zest of 1 lemon
½ bunch chives finely sliced

METHOD:

1️⃣Pat the Tomahawk dry with kitchen paper. Combine the spices in a mortar and pound to crack, then season with salt and pepper. Rub onto the steak, then drizzle with half the oil. Set on a hot griddle and cook for 20 minutes, turning regularly, until well-browned with a thick crust.

2️⃣Toss the tomatoes, onion and garlic in the remaining oil then cook on the griddle until the tomatoes blister and the garlic begins to brown. Put in a bowl with the rosemary, basil and pine nuts, then season with salt.

3️⃣Beat the butter, capers, truffle oil, lemon zest and chives. Serve the carved Tomahawk with the tomato compote and butter.

Chargrilled rump with gochujang butter

INGREDIENTS:

4 x 200g Nature’s Fresh rump steaks
sea salt flakes and freshly-ground black pepper
2 Tbsp extra virgin olive oil
150g unsalted butter, at room temperature
2 Tbsp Gochujang paste
¼ cup kimchi, drained and very finely chopped
1 Tbsp toasted sesame seeds
½ bunch coriander, very finely chopped
½ tsp Chinese five spice
cabbage pancakes, to serve*

METHOD:

1️⃣ Season the steaks with a generous amount of salt and pepper, then drizzle with the olive oil. Set aside for 5 minutes.

2️⃣ Place the butter in a bowl and beat with a spoon until very light. Mix in the Gochujang paste, kimchi, sesame seeds, coriander and five spice.

3️⃣ Cook the steaks over a hot barbecue grill for 8 minutes, turning regularly, until medium. Rest briefly, then carve and serve with the Gochujang butter and cabbage pancakes. * Ready to cook cabbage pancakes are available frozen from most Asian grocers.

Cook it quickly over intense high heat and it won’t disappoint.

Try this cut in our pear and cinnamon hanger steak recipe 👇👇

INGREDEINTS:

4 x 250g Nature’s Fresh hanger steaks
2 cups pear juice
½ cup light soy sauce
1 brown onion, shaved
8 cloves garlic, minced
6cm piece ginger, grated
2 tsp sesame oil
sea salt flakes and freshly-ground black pepper
cooking oil spray
2 cups short grain rice
½ cup sushi seasoning
2 cups daikon, cut into fine matchsticks
kimchi, toasted sesame seeds, sliced green shallots and coriander, to serve

METHOD:

1️⃣ Combine the pear juice, soy, onion, garlic, ginger and sesame oil in a bowl, then add the steaks. Cover and refrigerate for 2 days. Drain (discarding the marinade) then season with salt and pepper. Sprinkle with cooking oil, then cook on a hot grill for 10 minutes, turning often, until medium rare.

2️⃣ Meanwhile, wash the rice thoroughly, then place in a saucepan with 3 cups water. Boil until craters appear, then cover, turn the heat off and stand for 30 minutes. Fold in the sushi seasoning.

3️⃣ Spoon the rice into bowls, carve the steak and arrange on top, then finish with daikon, kimchi, sesame seed, shallots and coriander.
