Roasted pumpkin with butter and date syrup

  • whole Kent pumpkin (approx. 3kg)
  • 100g unsalted butter
  • 125g date syrup
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • finely grated zest of 2 oranges
  • sea salt flakes and freshly-ground black pepper
method
  • Preheat oven to 160°C. Use a sharp knife to cut a 15cm wide hole in the top of the pumpkin. Ensure the knife is at an angle so that the removed piece can be replaced. Scoop out the seeds.
  • Put the butter, date syrup, spices and zest in the cavity and season generously. Replace the lid and wrap in baking paper and foil. Bake for 2 hours. Increase heat to 200°C and bake for a further hour.
